When you walk into Yasmin’s kitchen, the first thing you’ll do is get an understanding of spices. There are so many different flavours it can often be overwhelming, but for each region there are actually only a handful of key spices. So Yasmin’s tip is to start with those and then only add more if it compliments your main ingredient.
“You must taste coriander seed, it has a beautifully delicate flavour. There are hints of citrus and orange. Fry in a bit of sunflower oil and eat with bread. It’s delicious!”
Yasmin grew up all over the UK with her mothers Pakistani cooking straight from Punjab. She was taught from a very young age the techniques of juggling spices. This home style Punjabi cooking continued to provide a strong influence of her life and finally in 2006 Yasmin decided not to return to the corporate world and create her own cookery school. Right in her kitchen!
After much success and many curries later, Yasmin partnered with her friend Pauline, the Scotia to her Spice as they say! Together they share the secrets of authentic Punjabi food, through their very own Punjabi cookery kits.
They have made it simple to becoming an expert in spicing curries by pouring generations of Punjabi cookery knowledge into a little box, perfect for receiving in the post. Their kits come in lamb, chicken or vegetarian and contain 6 different recipes, from the likes of tandoori chicken, bihari kebabs and masoor dahl.
